The golden rule: book as soon as your Carnival is confirmed.
For island Carnivals — Crop Over, Antigua, Spicemas, St. Lucia, Vincy Mas — hotel inventory is limited and prices move once the season heats up. For big city Carnivals — Miami, Toronto, Brooklyn, Notting Hill, Rotterdam — location is everything. The closer you are to the parade route, the faster those spots go.
